Pecan Crusted Truffles

Ingredients:

  • 1 1/4 cup Dark chocolate chips (70-85%)

  • 1/3 cup Coconut milk, full fat, canned

  • 1/4 tsp. Pure vanilla extract

  • 1/8th tsp. Ground cinnamon

  • 1/8th tsp. Ground nutmeg

  • pinch Pink or kosher salt

  • 1/4 cup Finely ground toasted pecans

Preparation:

  1. Preheat non-stick pan to low heat. Toast pecans for 4-6 minutes until fragrant. Place on cutting board and chop or place in food processor and pulse until finely ground (avoid over processing).

  2. Place chocolate chips in a medium stainless steel bowl.

  3. In a small pot, heat coconut milk until just simmered. Remove from heat and pour over chocolate chips.

  4. Cover bowl of chocolate chips and coconut milk and let rest for 5 minutes.

  5. Remove cover and stir in vanilla, cinnamon, nutmeg, and salt. Stir until everything is well combined and smooth.

  6. Place bowl in fridge for 2 hours to allow the mixture to set.

  7. After 2 hours, remove bowl and form truffles using an ice cream scoop or spoon (using your hands to roll is best).

  8. Once truffles are formed, roll each truffle into finely ground toasted pecans (optional).

  9. Keep truffles in a sealed container and in the fridge. Enjoy!
