Cranberry Cashew Granola

Ingredients:

  • 3 cups Rolled oats

  • 1 1/2 cups Cashews, raw

  • 1/2 cup Shredded coconut, unsweetened

  • 1/3 cup Coconut oil, melted

  • 1/4 cup Honey, local if possible

  • 1/4 tsp. Salt

  • 1 cup Cranberries, dried

Preparation:

  1. Preheat oven to 275 degrees.

  2. Combine oats, coconut, cashews and salt in a bowl. Mix.

  3. Melt coconut oil then mix with honey.

  4. Pour oil and honey mixture over the dry ingredients and stir until well combined.

  5. Spread granola on a non-stick baking sheet or over parchment paper.

  6. Bake in oven for 30-35 minutes, stir every 10 minutes.

  7. After 10 minutes of cooling, stir in dried cranberries then store in a sealed container, up to 2 weeks.

Serving Size: 1/4 cup

Nutrition Information:  this homemade granola is great to share, gift or to simply enjoy on your own. In comparison to store purchased granola, this granola will taste slightly less sweet and contain higher amounts of healthy fats.
