Pineapple, Cashew & Cilantro Black Rice

Ingredients:
4 cups Black rice, cooked
¾ tsp. Salt
1 each Red bell pepper, diced
½ cup Pineapple, canned in own juice, diced
¾ cup Shredded coconut, toasted
1 cup Cashews, raw, toasted
½ cup Cilantro, fresh, chopped
Preparation:
Cook black rice according to package. Season with salt during the cooking process.
Preheat oven to 250 degrees.
While the rice is cooking, toast the shredded coconut and cashews on a baking sheet in the oven. Roast for 7-8 minutes. Set aside.
Prepare the remaining ingredients and set aside until rice is done cooking.
Once rice is ready, mix all the ingredients together and enjoy!
Serving Size: ½ cup cooked
