Pineapple, Cashew & Cilantro Black Rice

Ingredients:

  • 4 cups Black rice, cooked

  • ¾ tsp. Salt

  • 1 each Red bell pepper, diced

  • ½ cup Pineapple, canned in own juice, diced

  • ¾ cup Shredded coconut, toasted

  • 1 cup Cashews, raw, toasted

  • ½ cup Cilantro, fresh, chopped

Preparation:

  1. Cook black rice according to package.  Season with salt during the cooking process.

  2. Preheat oven to 250 degrees.

  3. While the rice is cooking, toast the shredded coconut and cashews on a baking sheet in the oven.  Roast for 7-8 minutes. Set aside.

  4. Prepare the remaining ingredients and set aside until rice is done cooking.

  5. Once rice is ready, mix all the ingredients together and enjoy!

Serving Size:  ½ cup cooked

Nutrition Information:  black rice provides certain antioxidants that traditional while rice does not provide due to the black/purple hues.  Additionally, this dish stays fresh in your fridge for 3-4 days in an airtight container.
