Edamame, Avocado & Feta Salad

Ingredients:

  • 1 bag, 12 oz. Edamame, out of the shell, defrosted

  • 2 each Avocados, diced

  • 4 oz. Feta cheese, cubed

  • 1 lemon Juiced

  • ½ cup Cilantro, diced or chopped (use basil if desired)

  • 2 T. Extra virgin olive oil

  • ½ tsp. Salt

Preparation:

  1. Defrost edamame.

  2. Combine all ingredients into a medium size mixing bowl.  Mix well.

  3. Rest for 10 minutes in fridge.

  4. Enjoy with whatever your heart desires.

Serving Size:  1 cup
