Scrambled Duck Eggs

Total Time:  10 minutes
Ingredients:

  • ½ T.             Ghee, clarified butter or butter

  • 2 each          Duck eggs, local

  • pinch each Salt and pepper


Preparation:

  1. Bring small non-stick pan to medium low heat. 

  2.  Add butter or ghee into pan and swirl.  

  3. Generously whisk duck eggs in separate bowl.  Pour eggs into butter.

  4.  Season eggs followed by constantly stirring eggs with spatula until done. 

  5. Enjoy with sides of choice.

Serving Size:  2 cooked eggs 

Nutrition Information:  a great alternative to traditional eggs, loaded with protein, healthy fats, choline and vitamin B12.
