Salmon Cakes

Total Time:  25 minutes
Ingredients:

  • 2 each            Salmon filets, 5-6 oz. each, cooked and chilled (1 cup shredded salmon)

  • 1 each            Egg

  • ½ cup            Panko bread crumbs

  • 1 T.             Mayonnaise

  • ½ T.             Dijon mustard or whole grain mustard

  • 1 tsp.             Old Bay Seasoning

  • 1 T.           Coconut oil

Preparation:

  1. Preheat oven to 350 degrees.

  2. Shred cooked salmon filets into bowl (make sure to remove skin if there). Fork works well.

  3. Stir in egg, panko, mayo, mustard and old bay.  Combine well.  Chill in refrigerator for 10 minutes to slightly firm up mixture.

  4. Form mixture into 3 patties, roughly 4 oz. each.  

  5. Preheat medium non-stick pan to medium high heat. Add coconut oil.

  6. Pan sear salmon cakes, 2-3 minutes per side.  Finish cooking in oven by placing pan in oven, another 4-5 minutes.

  7. Enjoy!


Serving Size:  makes 3 patties, 1-2 patties each.  

Nutrition Information:  provides omega-3 fatty acids in an enjoyable form.  These reheat well as well as being an alternative to a traditional crab cake.
