Spinach Cheddar Egg Bake

Ingredients:
1 T. Extra virgin olive oil
½ each Onion, diced
¾ lb. Spinach, fresh
10 each Eggs, large
¼ cup Half and half
½ tsp. Salt
¼ tsp. Black pepper, ground
1 cup Cheddar cheese, shredded
Preparation:
Preheat oven to 350 degrees.
Bring large saute pan to medium heat. Add olive oil followed by diced onion. Season onion if desired and cook for 3-4 minutes or until softened.
Handful at a time, add spinach to pan and cook until all spinach has wilted and cooked. Set vegetables aside.
Generously spray a 13 x 9 glass casserole pan. Evenly distribute vegetables at the bottom of the pan (there will be some open spaces at the bottom of the pan – that is okay).
In a medium size mixing bowl, combine the eggs, half and half and seasoning. Whisk until all mixed together and pour over vegetables.
Evenly spread cheddar cheese over the eggs and bake for 35-45 minutes (knife should be able to come out clean).
Rest for at least 10-15 minutes before cutting.
Keep in seal tight container in the fridge. Freezes well if desired.
Serving Size: 1/8th of the pan or 1 piece (some may need more than 1 piece)
