Roasted Golden Beets

Ingredients:
2 lbs. Golden beets (3-4 medium to large beets)
½ tsp. Salt (optional)
Preparation:
Preheat oven to 375 degrees.
Wrap each beet with foil and place on baking sheet.
Roast in oven for 60-75 minutes, until cooked through and soft to touch.
Cool for at least 20 minutes before handling.
Using a pairing knife, trim off skin/peel and dice cooked beet and place in mixing bowl.
Season beets with salt if desired.
Enjoy immediately or cool and keep for another meal.
