Roasted Broccoli, Broccoflower & Slaw

Ingredients:

  • 1 head            Broccoflower (green cauliflower), chopped into florets

  • 4 each            Broccoli heads, medium size, chopped

  • ½ bag            Brussels slaw, pre-packaged

  • 3 T.             Extra virgin olive oil, separated

  • 1 tsp.             Salt, separated

  • ½ tsp.            Garlic powder


Preparation:

  1. Preheat oven to 375 degrees.

  2. In a large mixing bowl, add chopped broccoflower and broccoli.  

  3. Toss vegetables with 2 T. of olive oil, ¾ tsp. of salt and pinch of garlic powder.

  4. Place on preparing baking sheet, lined with foil and sprayed, and place in oven.

  5. While vegetables are roasting, add slaw to mixing bowl and toss with remaining olive oil, salt and garlic powder.

  6.  After 15 minutes of cooking, add slaw to broccoli and broccoflower mix.  Stir.

  7. Roast additional 10 minutes.  Enjoy!


Serving Size:  ¾ cup cooked
