Rainbow Slaw

Total Time:  30 minutes
Ingredients:

  • ½ each          Green cabbage, large head, outer leaves removed, diced

  • 1 each            Granny smith apple, diced

  • ½ each           Red bell pepper, diced

  • ¼ each           Sweet onion, diced

  • ¼ cup            Carrots, diced or shredded

  • 2 T.             Extra virgin olive oil

  • 2 T.             Apple cider vinegar

  • 1 T.             Honey

  • ½ tsp.             Salt


Preparation:

  1. Combine all ingredients to a large mixing bowl and stir until evenly coated.

  2. Keep in fridge for 20 minutes before serving to allow the cabbage to soften.

  3. Enjoy!  Keep in sealed airtight container, stores well for 3-4 days. 

Serving Size:  1 cup
