Pistachio Crusted Salmon

Total Time:  20 minutes
Ingredients:

  • 1 T.            Olive oil

  • 1 ¼ lbs.      Salmon, cut into 4 filets

  • ¼ tsp.        Salt

  • 1 ½ T.         Barbecue sauce of choice

  • ¼ cup        Pistachios, crushed


Preparation:

  1.  Preheat oven to 375 degrees.

  2. Spread 1 T. of olive on the bottom of a 13 x 9 casserole pan.

  3. Place salmon filets on the oil, skin side down.

  4. Season salmon with salt.

  5. Evenly distribute barbecue sauce on top of each salmon filet.

  6. Crush pistachios (place pistachios in a sealed bag and crush with canned food).

  7. Top each sauced filet with evenly distributed crushed pistachios.

  8. Bake 14-16 minutes or until done.  Cool 5 minutes before serving.   Enjoy!
