Mashed Sweet Potatoes

Total Time:  60 minutes
Ingredients:

  • 4 each      Sweet potatoes, medium

  • 1 T.         Ghee, clarified butter or butter

  • ¾ tsp.        Salt


Preparation:

  1. Preheat oven to 375 degrees.

  2. Place sweet potatoes on baking sheet and place in oven.

  3. Bake for 45 minutes, turning potatoes every 15 minutes.

  4. Cool for at least 5 minutes before handling.

  5. Remove peel/skin from potato while placing flesh of potato in a mixing bowl.

  6.  Stir in ghee or butter and salt into sweet potato and mash until well combined.

  7. Feel free to season with cinnamon, nutmeg and pepper if desired.  

  8.  Keep in airtight container if refrigerating.  Keeps for 5 days. 


Serving Size:  ½ cup cooked
