Herbed Balsamic Turkey Meatballs

Total Time:  30 minutes
Ingredients:

  • 1 lb.             Ground turkey

  • 1 each          Egg, large

  • 1 T.             Balsamic vinegar, aged

  • ½ cup          Panko bread crumbs

  • 1 tsp.            Herbs, dried mix of choice (e.g., thyme, rosemary, basil)

  • ½ tsp.          Salt 


Preparation:

  1. Preheat oven to 375 degrees.

  2. In a large mixing bowl, add all ingredients until well combined.

  3. Portion 10-12 meatballs out of mixture, roughly 2 T. per meatball and set aside.

  4. Preheat cast iron pan to medium high heat.

  5. Sear meatball for 3-4 minutes on each side.

  6. Bake in oven until done, roughly 15-20 minutes. 

  7. Enjoy with sides of choice (e.g., zucchini noodles and sourdough bread).  Freezes well. 

Serving Size:  3 meatballs 

Nutrition Information:  a great protein option that reheats well for any future meal.  Pairs well with pasta, gnocchi or risotto.
