Coconut Cod

Ingredients:
1 ½ lb. Cod filet, cut into four to five 4-5 oz. pieces
1 each Egg
½ cup Unsweetened shredded coconut
½ cup Bread crumbs
½ tsp. Salt
2 T. Coconut oil, separated (use for cooking/searing)
Preparation:
Preheat oven to 350 degrees.
Mix egg in shallow mixing bowl. Set aside.
Mix coconut, bread crumbs and salt in shallow plate. Set aside.
Spray 13 x 9 casserole pan with oil. Set aside.
Season cod filets with a pinch of salt.
Piece by piece, dip cod into egg batter followed by coating with coconut and bread crumbs. Set all coated pieces aside.
Preheat large non-stick pan to medium high heat. Add 1 T. coconut oil. Pan sear cod filets 1-2 minutes per side. Place in casserole pan once seared.
Continue process until all coated cod pieces have been seared and placed in casserole pan.
Bake for 5-7 minutes or until cod is done. Be sure to avoid over-cooking. Enjoy!

Nutrition Information: cod is a light white fish is typically easier to find wild caught. Wild caught fish is typically a higher quality seafood option in comparison to farm-raised fish.
