Cast Iron Chicken Cutlets

Ingredients:

  • 3 each       Chicken breast cutlets, 5 oz. each

  • ¼ tsp.        Sea salt

  • ¼ tsp.        Black pepper, ground

  • ½ tsp.        Garlic powder

  • ½ tsp.        Onion powder

  • 1 T.        Coconut oil

Preparation:

  1. Preheat oven to 350 degrees.

  2. Season both sides of chicken cutlets with salt, pepper, onion powder and garlic powder.

  3. Preheat cast iron pan to medium high heat.  Once hot, add coconut oil into pan.

  4. Sear one side of chicken cutlet for 4 minutes. Turn chicken cutlet to other side and sear for additional 4 minutes.

  5. Finish cooking chicken in oven, 3-6 minutes.  Rest for 5 minutes before eating.  Enjoy!

Serving Size:  4-5 oz. cooked chicken   

Nutrition Information:  this chicken is perfect to make for meal planning purposes.  Feel free to substitute the chicken cutlets for chicken thighs or pork tenderloin.
