Cashew & Macadamia Fluff

Ingredients:

  • 3 cups         Cashews, raw

  • 1 cup        Coconut milk, full fat, canned

  • 2 1/2 cups       Macadamia milk, unsweetened

  • 2 tsp.         Vanilla extract

  • 1/8th tsp.     Ground cardamom

  • ¼ tsp.         Cinnamon, ground


Preparation:

  1. Add cashews to blender such as a vitamix or ninja.

  2. Pour coconut milk and macadamia milk over nuts, should be ~1/2 cup over the top of the cashews.

  3. Add remaining ingredients and blend until pureed and smooth, about 1 minute.  

  4. Pour into air tight container and allow to thicken overnight in the refrigerator. 

Serving Size:  1/3 cup  

Nutrition Information:  this yogurt does not provide the same probiotics as traditional yogurt, but provides an alternative that is rich in heart healthy fats, magnesium, vitamin E and dietary fiber.
