Banana Pancakes

Total Time:  30 minutes
Ingredients:

  • 2 each        Bananas, ripe, mashed well

  • 3 each        Eggs

  • 1 each         Egg white

  • ¼ cup         Coconut flour or all-purpose flour

  • 1 T.              Milk

  • 1/8th tsp.    Salt

  • ¼ tsp.          Cinnamon

  • 2 T.              Butter (for cooking, separated)


Preparation:

  1. Mix all ingredients into a bowl until coconut flour has blended into the egg and banana (20-30 stirs).

  2.  Preheat a non-stick pan to medium heat.  Add 2 tsp. butter.  Make sure the pan is hot before adding any batter.

  3. Working in batches of 2-3 pancakes, pour 3 T. of batter into the pan per pancake.  

  4. Cook 2-3 minutes. Once the edges start to firm and bubbles start to appear, flip pancake to other side. 

  5. Set cooked pancakes aside and continue using the butter and remaining pancake batter to finish making.

  6. Enjoy with fresh berries, peanut butter or whatever your heart desires. 


Serving Size:  2 pancakes 

Nutrition Information:  these pancakes freeze well after cooking as well as being great for a mid-afternoon snack with 1 T. of peanut butter.  Feel free to top your pancakes with chopped nuts, fruit or chocolate chips during the cooking process.
