Guacamole

Ingredients:
1 ½ each Roma tomato, seeds removed, minced
¼ Red onion, minced (to taste)
3 each Avocados, ripe, flesh removed (diced)
1 ½ each Limes, juiced
½ cup Cilantro, chopped
¼ tsp. Salt
optional Jalapeno, deseeded, minced
Preparation:
Add minced tomatoes and red onion to medium mixing bowl. Stir.
Add diced avocado to tomatoes and red onion followed by freshly squeezed lime juice.
Gently mash avocado into mixture to desired texture.
Stir in remaining ingredients, gently.
Enjoy with any protein or entrée desired…guacamole tends to make everything better!
