Tomato Avocado Salad

Total Time:  15 minutes
Ingredients:

  • 1 each        Tomato, large, chopped

  • 1 each        Avocado, ripe, flesh removed, diced

  • 2 T.         Cilantro, chopped (season to taste)

  • ½ T.         Extra virgin olive oil

  • 1 T.         Lime juice, freshly squeezed

  • To taste     Salt and pepper


Preparation:

  1. Mix all ingredients in bowl together.  Gently stir until well combined. 

  2. Allow salad to rest for 5-10 minutes before serving.

  3.  Enjoy!


Serving Size:  ½ of salad or ~1 cup  

Nutrition Information:  the freshly squeezed lime juice will help preserve the salad as well as the acid from the tomatoes; however, this may not last longer than 2 days in the fridge, so eat up
